While this is not my best shot ever, it certainly does depict one of my favorite habits – that is, cooking! Peter and I cook at home most nights and we focus on healthy, fresh foods with a gourmet bent. Just about every Sunday night, we make a home-made pizza. I make a fresh dough (usually sprouted whole-wheat flour) in the food processor, let it rise, form it into a rustic shape on our pizza stone and then fill it with all kinds of yummy ingredients.
One year, we made a pact to do a different pizza every week, and I think, for the most part we did! This particular pizza is one of our favorites. I brush the dough with black truffle oil, then top it with Taleggio cheese and sauteed wild mushrooms. A local mushroom grower here in Northern Colorado provides Shitakes, Maitakes, Cinnamon Caps, Oysters, Trumpets, Lion Manes, and Portabellos, among others. We take the short trip to the Quonset Hut covered farm on Friday and pick-up a large bag of whatever varieties they’re selling that day. Alternatively in the winter, Fort Collins hosts a monthly indoor Farmer’s Market and I’ll get my mushrooms there on Saturday. Sorry the internet has not figured out a way for you to smell this pizza, because it’s divine (I know. Now I’m being mean.)

I totally love truffle oil, especially the black truffle oil – so earthy and mushroomy! This is a great combination. That Taleggio cheese is almost like a Brie – and it’s wonderful with the wild mushrooms. Thanks, Jen!

It looks lovely.
I have not tried food photography, but it is an interesting challenge. You have complete control of a small, easily portable subject. You could have a glass of wine or candle in the background. (Sometimes) you can play with the arrangement of the food on the plate, to make it most beautiful. The problem is letting the food go cold while you set up your shot!

I haven’t tried food photography either. This shot was actually in my photo album on my iPhone. But given the challenge, I had to talk about being a Foodie! And you’re right, Clare, I would not want to let this baby get cold to get a good shot of it! 🙂

That pizza looks sooooooooooooooooo delicious Cathy and I had been enjoying my Japanese vegetable noodle soup! But, as much as I LOVE mushrooms, unfortunately, I cannot digest cow’s milk cheeses, so no Taleggio for me. Life can be so cruel.

So sorry you can’t enjoy cow’s milk cheese, V. Can you do goat’s milk cheese? Because I’ve gotten some lovely goat’s milk brie at Whole Foods that would be a wonderful substitute! And yes, the wild mushroom pizza is truly heaven.

I love them too, V. And there are so many different varieties. We have several goat dairies here in Colorado that make outstanding cheeses including one of my favorites – a mild green chile Monterrey Jack. Oh yes, and a honey/lemon chevre.

It’s a great indoor market, Janet. There are vendors that sell mushrooms, locally made pasta, winter vegetables, local cheeses, flowers, etc. And it’s quite festive. We also have several summer farmer’s markets – I think about three a week where I am often seen (when I’m not picking from my own garden, that is!).

When I went gluten free I was sad because I love pizza. I finally found one that is incredible, and the pesto base is amazing. This is one habit I support!

I don’t eat pizza often because of the rubbish stuff you get in take-out places. I’ve homemade Italian pizzas a few times using the Polpo cookbook but they weren’t a patch on this! Yum!
